Cinnamon Bun Mug Cake

Breakfast, or and easy snack to go with your morning tea or coffee is just two minutes away with this  simple Cinnamon Bun in a Mug!



It's hard to believe that it's already time to post this months Secret Recipe Club assignment. This month, my assigned blog was the lovely Angels Homestead. From recipes, to gardening, to frugal living tips, April shares it all; and as of November, April and her family have lived full time out of an RV to wait out the cold Indiana winter months in sunny Florida. How fun!


Angels Homestead is packed with fantastic, grain free, recipes. I took a lot of time deciding what to make. Should I go with the Peanut Butter Pie? Oh that pie looks dreamy - but where to get cool whip and graham crackers in New Zealand without breaking the bank? (Someone PLEASE make this pie for me and report back!!) or the Pulled BBQ Chicken Sandwiches? Eventually, I settled for this quick and easy Cinnamon Bun Mug Cake.


I did actually intend to take the photos in the mug. I made it in our lovely big cups and saucers as well! But unlike your average mug cake recipe, this one didn't overflow and go everywhere - in fact, it got nowhere near. So thankful for the lack of mess, out of the mug the cake came.

This make cake was really delicious; perfect hint of cinnamon without being overpowering and a lovely texture. One thing I will do differently next time is use a substitute for the egg white - perhaps apple sauce, buttermilk, or yogurt.

Cinnamon Bun Mug Cake


Makes 1 Mug Cake

Cake


2 tablespoons flour
1/2 teaspoon cinnamon
1/8 tsp salt
1/2 teaspoon baking powder
1 egg white
3 tablespoons milk
2 tablespoons maple syrup 
1/2 teaspoon vanilla

Icing


2 tablespoons powdered sugar
1 teaspoon milk {A few more drops of milk may be needed}


1. Mix all of the cake ingredients in a small bowl, stirring well to combine.


2. Pour batter, it will be thick, into a coffee mug that has been greased with a little butter.


3. Allow batter to stand for 5 minutes, then microwave on high for 2 minutes.


4. Mix the icing ingredients in a small bowl, drizzle over the hot cake and serve immediately.
