Oatmeal Fudge Bars

A base of chewy oatmeal cookie, a center of gooey chocolate fudge, topped off with chunks of the chewy oatmeal.

Each of the 13 bloggers is assigned to another group members blog (in secret!) with the task of recreating one of the recipe on the appointed blog. I was given the stunning Café Terra - a sweet and savory food blog. It took me a good long time to actually narrow down all of the amazing recipes that were jumping out at me down to just one. Shortlisted recipes included Cherry Bourbon Crumble Bars, Blueberry Orange Cobbler, and Pulled Pork Mac n' Cheese.

In the end I went with the Oatmeal Fudge Cookie Bars and oh my!! What a treat they were!


These bars were really easy and fun to make and the combination of the chewy oats and oozy chocolate fudge was just phenomenal.



The recipe calls for chopped nuts to be added to the fudge mixture. I had some lovely sliced almonds sitting out on the counter with all my ingredients ready to go into the mix. I put the dish in the oven, turn around, and notice the almonds sitting waiting on the counter top.. Oops.. But the bars were still delightful without the nuts!



Oatmeal Fudge Bars


Makes about 20 bars

2½ cups flour, sifted
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) butter
2 cups brown sugar
2 eggs
3 cups quick oats
2 tsp vanilla
12 oz chocolate chips
1 can (12oz) sweetened condensed milk
½ tsp salt
2 tsp vanilla (for melted chocolate layer)
1 cup of chopped nuts (Terra uses walnuts)


Instructions


  1. Preheat oven to 180C (350 degrees Fahrenheit). Grease a 9x13 inch pan.
  2. In small bowl, mix together the flour, baking soda, and salt.
  3. In medium bowl, cream butter and sugar together with hand mixer, add egg and beat until light and fluffy.
  4. Stir in oats, vanilla, and then add in flour mixture. Reserve one cup of dough, press remaining dough in bottom of greased pan.
  5. In double boiler, on medium heat, melt together chocolate, sweetened condensed milk, salt, vanilla, and chopped nuts. Once the mixture is melted, spread evenly over dough in pan.
  6. Take clumps of reserved dough, and spread out in clumps over top of bar.
  7. Bake for about 25-30 minutes. Let cool before cutting the bars.
