The beautiful flavors of a Thai Green Curry are incorporated into this simple fried rice.
Asian cuisine is by far my favorite to both cook and eat. Most Asian-inspired dishes are quick and easy to prepare and the flavors are just wonderful. What I most love about Thai (and other South-East Asian) dishes is the beautiful, fresh flavors; especially owing to the coriander (cilantro) and lime.
If you're a regular around here you're probably rolling your eyes at this post, thinking "another green-curry based dish?!" Okay, so it's clearly a favorite of mine and so fun to play around with! Thai Green Curry Fried Rice
Serves 4-6
2 Cups rice, uncooked
1 Tbsp sesame oil
400 g chicken breast, diced or sliced
1 onion, finely diced
2 cloves garlic, crushed
1 red chili, finely diced
1 Cup mixed vegetables (eg. bell pepper, peas, beans etc)
1 Tbsp green curry paste
2 Tbsp coconut cream
2 tsp fish sauce
1 squeeze lime juice + 1 tsp lime zest
1/2 tsp brown sugar
Chopped coriander to serve
1. Cook the rice following package directions. Allow to cool completely.
2. Heat the oil in a wok or large fry pan and fry the chicken, onion, and garlic until chicken is almost cooked. Add the chili, continue to fry for a further minute. Add the mixed vegetables.
3. Combine the curry paste, cream, fish sauce, lime juice and zest and brown sugar together in a small bowl.
4. Add the rice and sauce to the wok and stir fry to combine everything well. Heat through and serve topped with chopped coriander.
