Mixed Berry French Toast Bake

This Mixed Berry French Toast Bake is a breakfast or brunch the whole family will love.



Your weekend breakfast doesn't get much easier than this. You just need to put in 5 minutes the night before, then another few minutes in the morning, pop it in the oven and wait for the oven to do all the hard work.


My Secret Recipe Club  assignment this month introduced me to Our Eating Habits . This lovely food blog is hosted by Jamie, who loves to cook, bake, and find great new restaurants. She creates beautiful meals and baked treats for her family and I had a blast reading through all her work.


I stopped in my tracks when I found her Mixed Berry French Toast Bake recipe and knew that this was the one I had to try. The recipe is so simple and so easy to follow. The end result is absolutely delightful, and was thoroughly enjoyed on a Saturday morning :)


If you're only a household of two, like us, then you'll be pleased to hear that this French Toast Bake keeps very well and reheats beautifully (in the oven to keep the lovely crispy top, of course!).


Mixed Berry French Toast Bake

Serves 4-6

1 loaf/stick French Bread
6 eggs
1 3/4 cup milk
1 tsp sugar
1 tsp cinnamon
1 tsp vanilla
1/4 tsp salt
340 g (12 ounces) frozen mixed berries
2 Tbsp cold butter
1/3 cup packed brown sugar
syrup and whipped cream for serving
1. Cube bread and place in a greased 13×9 inch baking dish.
2. Whisk together eggs with next 5 ingredients. Pour over bread. Cover. Refrigerate overnight.
3. Take out bread and berries from freezer and let sit for 30 minutes. Pour berries on top of bread. Bake, covered, for 30 minutes at 350 degrees.
4. Remove from oven. Cut together butter and brown sugar and sprinkle on French toast. Return to oven for an additional 20 minutes. (Uncovered).
5. Cut into squares and serve with syrup.
6. Eat and enjoy
