Salted Caramel Chocolate Truffles

Chocolate Truffles are a classic Christmas gift. They are simple to make and a decadent treat. These Salted Caramel Chocolate Truffles are sure to be a hit!

I was planning on make truffles again this year - they are so much fun! I had a whole lot of salted caramel that I needed to use up so why not try a salted caramel and chocolate truffle? Best idea ever.

These truffles are just lovely. The chocolate coating gives a great crunch when you take a bite and the centre has the most gorgeously soft consistency.

Being half caramel and half chocolate there is a great balance between the two, and they are not overly sweet.

Salted Caramel Chocolate Truffles

Makes about 20

1 Cup dark chocolate chips
1/3 Cup cream
1 Cup salted caramel
200 g milk or white (or both) chocolate for dipping

1. Melt the chocolate chips into the cream. Stir until smooth, Add the salted caramel and mix well to combine. Place in the refrigerator to chill for an hour or two.

2. Roll the caramel chocolate mixture into balls. I spooned mine into a cake pop mold instead of rolling, Return to the refrigerator to chill again.

3. Melt the 200 g of dipping chocolate and dip each truffle into the melted chocolate to coat. Place each truffle onto a piece of baking paper to allow the chocolate to set.

4. Store in the refrigerator to avoid melting.
