No Bake Peanut Cookie Balls

Sitting somewhere between a truffle and a cookie; these no bake peanut balls are a great sweet treat.



These cookie balls are super easy to make, and a great no bake treat option. I made these just before Christmas and we were happily eating them for a good couple of weeks - they hold really well!


Just like a truffle, these would make a lovely homemade gift. At this time of year, I'm thinking Valentine's Day for all of your chocolate and peanut loving partners!


The saltiness of the peanut butter balances beautifully with the sweetness of the sugar and condensed milk and the slight bitterness of the chocolate. If you like sweets, you'll love these!


When you're melting chocolate to coat a truffle, or cookie ball, or anything like this it's better not to use the best quality chocolate. The lower quality chocolate tends to melt more smoothly and then set again much more quickly as well as a lot more solidly. 



No Bake Peanut Cookie Balls


Makes approximately 32

400 g can condensed milk
100 g butter
1/2 cup brown sugar
250 g digestive biscuits (or any plain biscuit)
3/4 cup peanut butter
1/4 cup chopped peanuts
200 g milk, dark, or white chocolate

1. Heat the condensed milk, butter, sugar, and peanut butter together in a saucepan over a medium heat until everything is well combined.

2. Process the biscuits to a crumb in a food processor and add to the mixture in the saucepan, add the chopped peanuts as well. Mix well to combine.

3. Roll the mixture into tablespoon sized balls and chill. When they have set, melt the chocolate until smooth and dip each ball into the chocolate to coat evenly and all over.

4. Store in an airtight container, in the fridge if it's hot, or just in the cupboard if it's winter.
