Russian Fudge Bars

What makes fudge even better than just plain ol' normal fudge? Coating it in chocolate and making it into candy bars of course!



Russian Fudge is a delightfully melt in the mouth, sweet, sugary, more some fudge. It's easily and cheaply made at home and keeps for a really long time!


Russian fudge is basically a vanilla fudge. I am not all that sure why exactly we call it Russian fudge here in NZ. So I googled it. I got nothing - aside from page upon page of beautiful pictures of this delightful treat and tonnes of recipes. 


Aside from not actually being Russian, Russian fudge is by far the most loved fudge flavor in New Zealand. This stuff is everywhere! Since the fudge itself is chocolate-free, I covered it in chocolate to make it even more perfect!


This fudge would make a lovely homemade gift, especially for Valentines Day!


A Russian Fudge recipe isn't quite as quick and simple as your normal fudge recipe but the extra time and effort is absolutely worth every second!

Russian Fudge Bars


Makes about 15 bars

3 1/2 Cups white sugar
125 g Butter
3 Tbsp Golden Syrup
1/2 Cup skim milk
1/2 tsp salt
200 g condensed milk (half a tin)
2 tsp vanilla essence
200 g milk or dark chocolate

1. Add everything except the vanilla essence and chocolate to a large sauce-pan over a medium heat. Heat for about 15 minutes, until the sugar dissolves, being careful not to burn the sugar. Once the mixture starts to bubble, keep it very gently bubbling for about 10 minutes. It will start looking quite glossy.

2. Remove from the heat, add vanilla, and mix with an electric hand-mixer for a couple of minutes.

3. Pour into a baking paper lined slice pan and refrigerate until set.

4. Cut the fudge into bars. Melt the chocolate and mix it until it's smooth and glossy. I use the microwave in 30 second bursts. Dip each bar in the chocolate to coat all over. Place on non-stick baking paper and return to the refrigerator to set.
