Banana Muffins


However, I have modified it:  my version uses one fewer banana, and I often add chocolate chips.  It's very easy and delicious, and kids can help without too much trouble.

Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
1/2 cup chocolate chips (optional)

Directions:

1. Preheat oven to 350 degrees.  Coat muffin tin with butter, or use paper liners.
2. In a small bowl, sift together the flour, baking powder, baking soda, and salt.  Put aside.
3. In a large bowl, combine bananas, sugar, egg, and butter.  Fold in dry mixture and mix until smooth.  Add chocolate chips if desired.  Scoop mixture into muffin tin.
4.  Bake in preheated oven.  Bake large muffins for 25-30 minutes, and mini muffins for 10-15 minutes.
